Ingredients
For the Pasta
- 1 pound spaghetti
- Salt (for pasta water)
For the Sauce
- 2 tablespoons olive oil
- 1 medium onion, sliced
- 2 garlic cloves, sliced
- 1 cup spinach
- 1 cup plain hummus
- 1 lemon, juiced and zested
- ¼ cup fresh basil, chopped (plus more for serving)
- Pinch of crushed red pepper
Optional for Serving
- Parmesan cheese
- Extra fresh basil
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil over high heat. Add the spaghetti and cook according to the package instructions until al dente. Before draining, reserve 1 cup of the pasta cooking water. Drain the pasta and return it to the pot to keep warm.
- Sauté Aromatics and Spinach: In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook for 5-7 minutes until they become fragrant and softened. Add the sliced garlic and cook for an additional 30 seconds until aromatic. Stir in the spinach and cook for about 1 minute, just until it wilts slightly.
- Make the Hummus Sauce: Add the hummus, about half a cup of the reserved pasta water, lemon juice, and lemon zest to the skillet. Stir well to combine, forming a creamy sauce. If the sauce is too thick, add more pasta water a little at a time until you reach your desired consistency.
- Combine Pasta and Sauce: Transfer the cooked spaghetti into the skillet with the sauce. Turn off the heat and toss everything together until the pasta is evenly coated with the creamy hummus sauce. Sprinkle in the chopped basil and a pinch of crushed red pepper for flavor.
- Serve: Serve the hummus pasta immediately, garnished with additional fresh basil and parmesan cheese if desired, for an extra touch of richness and flavor.
Notes
- You can substitute spaghetti with any pasta shape you prefer.
- Use plain hummus for the best flavor base; flavored hummus varieties may alter the taste.
- Add toasted pine nuts or chopped walnuts for extra texture.
- Adjust the amount of crushed red pepper to control the spice level.
- For a vegan option, omit the parmesan cheese or use a plant-based alternative.
- Reserve pasta water is key to adjusting sauce consistency smoothly.
