Ingredients
Dry Ingredients
- 1 cup fine almond flour
- 1/4 cup cocoa powder
- 2 tbsp dutch cocoa or additional regular cocoa powder
- 1 tsp baking powder
- 1/2 tsp salt
Wet Ingredients
- 1/3 cup melted coconut oil or butter
- 3 tbsp water or additional oil
- 2 eggs, or 2 flax eggs (for vegan alternative)
- 2/3 cup granulated erythritol or regular sugar
- 1 tsp pure vanilla extract
Instructions
- Preheat Oven. Set your oven to 350°F (175°C) and grease an 8-inch baking pan or line it with parchment paper to prevent sticking.
- Mix Ingredients. In a large mixing bowl, combine the almond flour, cocoa powder, dutch cocoa (if using), baking powder, and salt. In a separate bowl, whisk together the melted coconut oil or butter, water or additional oil, eggs or flax eggs, erythritol or sugar, and vanilla extract.
- Combine Wet and Dry. Pour the wet ingredients into the dry ingredients and mix thoroughly until you achieve a smooth and even batter with no lumps.
- Prepare Pan. Spread the brownie batter evenly into the prepared pan, smoothing the top with a spatula or using a second sheet of parchment paper to press down the batter for an even surface.
- Bake. Place the pan on the center rack of your preheated oven and bake for about 20 minutes. The brownies should be set but still moist inside.
- Cool Down. Remove the pan from the oven and allow the brownies to cool completely at room temperature. Cooling helps them to firm up.
- Optional Refrigeration. For even firmer brownies, refrigerate them covered loosely overnight before serving.
