Description

These easy low carb keto brownies are made with almond flour and are perfect for anyone following a ketogenic or low-carb diet. They are rich, fudgy, and chocolatey with a simple blend of ingredients, baked to perfection in just 20 minutes. Enjoy them as a guilt-free dessert or snack that satisfies your chocolate cravings without the sugar spike.

Ingredients

Dry Ingredients

  • 1 cup fine almond flour
  • 1/4 cup cocoa powder
  • 2 tbsp dutch cocoa or additional regular cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp salt

Wet Ingredients

  • 1/3 cup melted coconut oil or butter
  • 3 tbsp water or additional oil
  • 2 eggs, or 2 flax eggs (for vegan alternative)
  • 2/3 cup granulated erythritol or regular sugar
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat Oven. Set your oven to 350°F (175°C) and grease an 8-inch baking pan or line it with parchment paper to prevent sticking.
  2. Mix Ingredients. In a large mixing bowl, combine the almond flour, cocoa powder, dutch cocoa (if using), baking powder, and salt. In a separate bowl, whisk together the melted coconut oil or butter, water or additional oil, eggs or flax eggs, erythritol or sugar, and vanilla extract.
  3. Combine Wet and Dry. Pour the wet ingredients into the dry ingredients and mix thoroughly until you achieve a smooth and even batter with no lumps.
  4. Prepare Pan. Spread the brownie batter evenly into the prepared pan, smoothing the top with a spatula or using a second sheet of parchment paper to press down the batter for an even surface.
  5. Bake. Place the pan on the center rack of your preheated oven and bake for about 20 minutes. The brownies should be set but still moist inside.
  6. Cool Down. Remove the pan from the oven and allow the brownies to cool completely at room temperature. Cooling helps them to firm up.
  7. Optional Refrigeration. For even firmer brownies, refrigerate them covered loosely overnight before serving.

Notes

  • You can substitute eggs with flax eggs to make these brownies vegan-friendly.
  • Choosing erythritol makes these brownies keto-friendly and low in carbs.
  • Adjust sweetness by using regular sugar if not following a low-carb diet.
  • Using parchment paper makes cleanup easier and prevents sticking.
  • Letting brownies cool fully is essential for the right texture.
  • Refrigerating overnight improves firmness and texture.
