Description

Korean Marinated Eggs, or Mayak Gyeran, are savory, garlicky, and slightly sweet marinated eggs with a perfectly soft and gooey yolk. These eggs are marinated in a rich sauce made with soy sauce, garlic, honey, and chili for a flavorful accompaniment to rice or as a delicious snack, appetizer, or side dish. Easy and affordable to make, these eggs bring authentic Korean flavors to your table, perfect for breakfast, lunch, or dinner.

Ingredients

Main Ingredients

  • 12 Eggs
  • 2 tsp Salt
  • 2 tbsp Vinegar

Marinade

  • 6 cloves Garlic, minced
  • 2 Korean Green Peppers, chopped
  • 1 Red Chili, chopped (optional)
  • 3 Green Onions, chopped (optional)
  • 1 tbsp Sesame Seeds
  • 1 cup Soy Sauce
  • ½ cup Honey
  • 1 tbsp Sesame Oil (optional)
  • ½ cup Water

Instructions

  1. Prepare the Boiling Water: In a pot, add enough water to cover all the eggs. Add salt and vinegar, then bring the water to a simmer over medium-high heat. This helps in peeling the eggs later and imparts subtle flavor.
  2. Cook the Eggs: Once the water is boiling, gently add the eggs and let them cook for exactly 6 minutes. This timing ensures the yolks remain soft and slightly gooey.
  3. Cool and Peel: Remove the eggs from boiling water and immediately transfer them into a bowl of ice water. Let them cool completely for at least 10 minutes. Once cooled, peel the eggs carefully to keep the whites intact.
  4. Make the Marinade: In a container, combine minced garlic, chopped Korean green peppers, optional red chili and green onions, sesame seeds, soy sauce, honey, optional sesame oil, and water. Stir thoroughly until all ingredients are well mixed.
  5. Marinate the Eggs: Place the peeled eggs into the marinade, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours to allow flavors to fully penetrate, ideally overnight for best taste.
  6. Serve: Remove the eggs from the marinade and serve chilled or at room temperature with a hot bowl of rice. Enjoy this flavorful and addictive Korean delicacy!

Notes

  • Use fresh eggs for best results, but slightly older eggs peel more easily.
  • Adjust the marinating time for a stronger or milder flavor; overnight yields most flavor.
  • Omitting sesame oil is fine if unavailable; it adds a nutty aroma but is optional.
  • The red chili and green onions are optional and add heat and freshness.
  • Serve these eggs as a side dish, snack, or part of a Korean meal with rice and other dishes.
