Ingredients

Omelette Filling

  • 1 tablespoon oil
  • ¼ onion, chopped
  • ½ jalapeno, seeded and chopped
  • 1 tomato, diced
  • Salt and pepper to taste
  • ⅛ teaspoon ground cumin (or a pinch)

Omelette

  • 1 tablespoon butter
  • 3 large eggs
  • ¼ cup shredded cheese (Monterey Jack or Mozzarella)

Toppings

  • Chopped cilantro
  • Sliced avocado


Instructions

  1. Heat the oil: Warm 1 tablespoon of oil in a large skillet over medium heat until hot.
  2. Sauté vegetables: Add the chopped onion, jalapeno, and diced tomato to the skillet. Season with salt, pepper, and ground cumin. Cook for 3-4 minutes, until the tomato softens and the mixture is fragrant.
  3. Set filling aside: Remove the sautéed vegetable mixture from the skillet and set aside.
  4. Melt butter: In the same skillet, melt 1 tablespoon of butter over medium heat to prepare for the eggs.
  5. Cook eggs: Whisk 3 large eggs until combined, then pour into the skillet. Cook undisturbed for 30 seconds.
  6. Set the omelette edges: Gently lift the edges of the cooking eggs with a spatula to allow the uncooked egg to flow underneath and cook evenly.
  7. Add filling and cheese: Spoon the cooked vegetable mixture onto one side of the omelette. Sprinkle the shredded cheese over the filling.
  8. Fold and finish cooking: Carefully fold the other half of the omelette over the filling. Continue cooking for another 2 minutes or until the eggs are fully cooked and the cheese has melted.
