Ingredients
Omelette Filling
- 1 tablespoon oil
- ¼ onion, chopped
- ½ jalapeno, seeded and chopped
- 1 tomato, diced
- Salt and pepper to taste
- ⅛ teaspoon ground cumin (or a pinch)
Omelette
- 1 tablespoon butter
- 3 large eggs
- ¼ cup shredded cheese (Monterey Jack or Mozzarella)
Toppings
- Chopped cilantro
- Sliced avocado
Instructions
- Heat the oil: Warm 1 tablespoon of oil in a large skillet over medium heat until hot.
- Sauté vegetables: Add the chopped onion, jalapeno, and diced tomato to the skillet. Season with salt, pepper, and ground cumin. Cook for 3-4 minutes, until the tomato softens and the mixture is fragrant.
- Set filling aside: Remove the sautéed vegetable mixture from the skillet and set aside.
- Melt butter: In the same skillet, melt 1 tablespoon of butter over medium heat to prepare for the eggs.
- Cook eggs: Whisk 3 large eggs until combined, then pour into the skillet. Cook undisturbed for 30 seconds.
- Set the omelette edges: Gently lift the edges of the cooking eggs with a spatula to allow the uncooked egg to flow underneath and cook evenly.
- Add filling and cheese: Spoon the cooked vegetable mixture onto one side of the omelette. Sprinkle the shredded cheese over the filling.
- Fold and finish cooking: Carefully fold the other half of the omelette over the filling. Continue cooking for another 2 minutes or until the eggs are fully cooked and the cheese has melted.
- Garnish and serve: Top with freshly chopped cilantro and sliced avocado. Optionally, serve with remaining filling and salsa on the side for extra flavor.

- Use fresh cheese for best melting results.
- This recipe can be doubled to serve more people.
