Ingredients

Miso Butter Cabbage:

  • 3 tbsp butter, divided
  • 1 tbsp miso paste
  • 1 sweetheart (hispi) cabbage, cut into 4 wedges (pointed cabbage in the US)

  • ¼ cup Panko breadcrumbs
  • ¼ tsp garlic powder
  • 1 tbsp chopped parsley, optional


Instructions

  1. Preheat Oven and Prepare Cabbage: Preheat your oven to 200°C (400°F). Cut the sweetheart cabbage into 4 wedges, keeping the base intact to hold the layers together.
  2. Make Miso Butter and Brush Cabbage: Soften 2 tablespoons of butter and mix it thoroughly with the miso paste. Brush this mixture evenly all over the cabbage wedges, including the base, to ensure every bite is flavorful.
  3. Roast Cabbage: Arrange the cabbage wedges on a baking sheet and roast them in the preheated oven for 30 to 35 minutes. Roast until the cabbage edges are charred and golden, while the insides remain slightly crispy.
  4. Prepare Breadcrumb Topping: While the cabbage roasts, melt the remaining 1 tablespoon of butter in a pan over medium heat. Add the panko breadcrumbs and garlic powder, stirring continuously to toast the breadcrumbs evenly until golden brown. Remove from heat promptly to avoid burning.
