Ingredients
Miso Butter Cabbage:
- 3 tbsp butter, divided
- 1 tbsp miso paste
- 1 sweetheart (hispi) cabbage, cut into 4 wedges (pointed cabbage in the US)
Breadcrumb Topping:
- ¼ cup Panko breadcrumbs
- ¼ tsp garlic powder
- 1 tbsp chopped parsley, optional
Instructions
- Preheat Oven and Prepare Cabbage: Preheat your oven to 200°C (400°F). Cut the sweetheart cabbage into 4 wedges, keeping the base intact to hold the layers together.
- Make Miso Butter and Brush Cabbage: Soften 2 tablespoons of butter and mix it thoroughly with the miso paste. Brush this mixture evenly all over the cabbage wedges, including the base, to ensure every bite is flavorful.
- Roast Cabbage: Arrange the cabbage wedges on a baking sheet and roast them in the preheated oven for 30 to 35 minutes. Roast until the cabbage edges are charred and golden, while the insides remain slightly crispy.
- Prepare Breadcrumb Topping: While the cabbage roasts, melt the remaining 1 tablespoon of butter in a pan over medium heat. Add the panko breadcrumbs and garlic powder, stirring continuously to toast the breadcrumbs evenly until golden brown. Remove from heat promptly to avoid burning.
- Assemble and Serve: Once the cabbage is roasted, sprinkle the toasted garlic breadcrumbs over the wedges. Garnish with chopped parsley if desired, then serve immediately for a warm, crispy, and savory side dish.
