Ingredients
Wet Ingredients
- 1 cup mashed ripe bananas (about 2 to 3 small bananas)
- 1/2 cup grated apple (about 1 small apple)
- 1/4 cup grated carrot (about 1 small carrot)
- 3/4 cup milk
- 1/4 cup unsalted butter, melted and cooled
- 1 large egg
- 1 tsp vanilla extract
Dry Ingredients
- 1 cup whole wheat flour
- 1/2 cup old-fashioned oats
- 1 tsp ground cinnamon
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/8 tsp salt
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it to prevent sticking.
- Mix Wet Ingredients: In a large bowl, combine the mashed bananas, grated apple, grated carrot, milk, melted butter, egg, and vanilla extract. Whisk together until smooth and well incorporated.
- Combine Dry Ingredients: In a separate bowl, mix the whole wheat flour, old-fashioned oats, ground cinnamon, baking powder, baking soda, and salt until evenly distributed.
- Combine Wet and Dry Mixtures: Gradually add the dry ingredient mixture to the wet ingredients, stirring gently until just combined. Avoid overmixing to keep the muffins tender.
- Spoon Batter into Muffin Tin: Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.
- Bake: Bake in the preheated oven for 22 to 26 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Cool Muffins: Remove the muffins from the oven and allow them to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
