Ingredients

Mushrooms

  • 12 Large Fresh Mushrooms
  • 3 Tbsp Butter, melted
  • ¼ cup Mozzarella Cheese, finely grated

Filling

  • 1 can Minced Clams (6 oz), drained
  • 1 Green Onion, finely chopped
  • 1 Large Egg, beaten
  • 2 tsp Minced Garlic
  • ½ cup Italian Bread Crumbs
  • 1 tsp Dried Oregano
  • 1 Tbsp Butter, melted
  • 3 Tbsp Grated Parmesan Cheese


Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees F (175 degrees C) and lightly spray a baking dish with non-stick cooking spray to prepare for baking.
  2. Prepare Mushrooms: Carefully remove the stems from the mushrooms and clean each mushroom cap gently using a dry paper towel to avoid sogginess from water.
  3. Make the Filling: In a mixing bowl, combine the minced clams (drained), chopped green onion, beaten egg, minced garlic, Italian bread crumbs, dried oregano, melted butter, and grated Parmesan cheese. Stir well until all ingredients are evenly mixed.
  4. Stuff Mushrooms: Spoon 1-2 tablespoons of the clam filling into each mushroom cap, placing them so the filling side is up in the prepared baking dish. Depending on mushroom size, you should be able to fill between 8 to 12 mushrooms.
  5. Add Butter: Drizzle the 3 tablespoons of melted butter evenly over the stuffed mushrooms to enhance flavor and moisture.
  6. Bake Covered: Cover the baking dish with foil and bake in the preheated oven for about 20-30 minutes or until the mushrooms become tender.
  7. Add Mozzarella and Finish Baking: Remove the foil, sprinkle the grated mozzarella cheese on top of each mushroom, then return the dish uncovered to the oven and bake for an additional 2-3 minutes until the cheese is melted and bubbly.
