Description

These Peanut Butter Blondies are a simple and delicious treat made with just 7 ingredients. They offer a perfect balance of sweet vanilla, warm brown sugar, and rich peanut butter flavor, baked to a soft, chewy texture that’s easy to enjoy any time.

Ingredients

Wet Ingredients

  • ½ cup unsalted butter, melted
  • 1 large egg
  • 1½ teaspoons vanilla extract
  • ½ cup peanut butter

Dry Ingredients

  • 1 cup light brown sugar
  • ¼ teaspoon salt
  • 1 cup all-purpose flour

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 350°F. Line an 8×8-inch baking dish with parchment paper, leaving some hanging over the edges for easy removal. Lightly grease the parchment paper with nonstick cooking spray and set aside.
  2. Mix Wet Ingredients: In a large mixing bowl, combine the melted butter and brown sugar until well blended. Then add the egg, vanilla extract, and peanut butter, mixing thoroughly until the mixture is smooth and even.
  3. Add Dry Ingredients: Stir in the salt and all-purpose flour into the wet mixture until the batter is smooth and fully incorporated, careful not to overmix.
  4. Spread and Bake: Evenly spread the blondie batter in the prepared baking dish. Bake for 18 to 20 minutes or until a toothpick inserted into the center comes out clean, indicating doneness.
  5. Cool and Slice: Use the parchment paper to lift the blondies out of the pan. Allow them to cool completely on a wire rack before slicing into 12 squares with a sharp knife. Serve and enjoy!

Notes

  • For added texture, mix in chopped walnuts, white chocolate chips, or raisins before baking.
  • Make sure blondies are fully cooled before cutting to create clean, neat squares.
  • Store in an airtight container at room temperature for up to 5 days, or refrigerate for up to one week.
  • Blondies can be frozen; thaw overnight in the refrigerator or for a couple of hours at room temperature before serving.
