Instructions

  1. Combine Sugar and Syrup: In a large saucepan over medium heat, combine the light brown sugar and light corn syrup. Stir occasionally and bring the mixture to a gentle boil.
  2. Add Vanilla and Peanut Butter: Remove the saucepan from heat. Stir in the vanilla extract and creamy peanut butter until fully combined and smooth.
  3. Mix in Cornflakes: Gently fold the crushed cornflakes into the peanut butter mixture until they are evenly coated and well mixed without crushing the flakes too much.
  4. Press into Pan: Spread the mixture evenly in a 9″ x 13″ pan for thinner bars or a 9″ x 9″ pan for thicker bars, pressing gently to compact the mixture.
  5. Chill and Set: Place the pan in the refrigerator and chill for about 2 hours until the bars are firm and set.
