These Peanut Butter Frozen Yogurt Bars are creamy, nutty, and refreshing, made with Greek yogurt, peanut butter, and natural sweetener, then topped with optional chocolate chips and chopped peanuts for a healthier frozen treat.
Ingredients
1 cup Greek yogurt (full-fat for extra creaminess)
½ cup peanut butter (natural, creamy, or chunky)
¼ cup honey or maple syrup
1 teaspoon vanilla extract
¼ cup mini chocolate chips (optional)
¼ cup chopped peanuts (optional)
Instructions
- In a bowl, whisk together Greek yogurt, peanut butter, honey or maple syrup, and vanilla extract until smooth and well combined.
- If using, fold in mini chocolate chips and chopped peanuts.
- Line an 8×8-inch baking dish with parchment paper, leaving an overhang for easy removal.
- Spread the yogurt mixture evenly into the lined dish with a spatula.
- Freeze for at least 4 hours, or until completely firm.
- Lift the mixture out using the parchment paper and slice into bars of your preferred size.
- Serve immediately or store leftovers in an airtight container in the freezer for up to 2 months.
Notes
For a nut-free version, use sunflower seed butter or tahini.
Make it dairy-free by using coconut yogurt instead of Greek yogurt.
Add crunch with granola, pretzels, or coconut flakes.
For extra protein, add a scoop of protein powder.
Drizzle melted dark chocolate over the bars before freezing for a richer flavor.
