Ingredients
Cookie Dough
- ½ cup salted butter, softened
- ½ cup brown sugar
- ½ cup white granulated sugar, plus extra for rolling cookie dough
- 1 egg
- ½ cup creamy peanut butter
- 2 teaspoons vanilla extract
- 1½ cup all purpose flour
- ¼ teaspoon salt
- 1 teaspoon baking soda
Decoration
- 24 Hershey Kisses, unwrapped
Instructions
- Prepare Baking Sheet and Preheat Oven: Line a baking sheet with parchment paper or a silicone liner and set aside. Preheat the oven to 350°F (175°C) before baking.
- Cream Butter and Sugars: In a large mixing bowl, beat the softened butter, brown sugar, and white granulated sugar together until the sugars dissolve into the butter, about 2 to 3 minutes. Scrape down the sides of the bowl as needed to ensure even mixing. Add the egg and beat until the mixture becomes fluffy.
- Add Peanut Butter and Vanilla: Mix in the creamy peanut butter and vanilla extract thoroughly until well combined with the butter and sugar mixture.
- Incorporate Dry Ingredients: Add the all-purpose flour, salt, and baking soda to the wet ingredients. Mix well until a smooth cookie dough forms with no visible pockets of flour.
- Scoop and Roll Dough Balls: Use a 1½ tablespoon scoop to portion out about 24 dough balls. Roll each in granulated sugar to coat and then place them evenly spaced on the prepared baking sheet.
- Bake Cookies: Bake in the preheated oven for 8 to 10 minutes, until the cookies are just set and slightly golden around the edges.
- Press Hershey’s Kisses Into Cookies: Immediately upon removing the cookies from the oven, gently press one unwrapped Hershey Kiss into the center of each warm cookie.
- Cool and Serve: Allow the cookies to cool on the baking sheet before serving, or enjoy immediately for delicious melty chocolate centers.
Notes
- Storage: Once completely cooled, store the cookies in an airtight container at room temperature for up to 4 days to maintain freshness.
- For a stronger peanut butter flavor, try using natural peanut butter, but be aware it may slightly change the dough texture.
- Rolling dough balls in sugar before baking adds a subtle crunch and sparkle to the cookie surface.
