- 2/3 cup peanut butter
- 3/4 cup old fashioned (rolled) oats
- 2 tbsp maple syrup
Topping Ingredients
- 1 tbsp peanut butter (per oat cup)
- 1/2 cup peanut butter
- 3 tbsp protein powder
- 1 cup chocolate chips (melted)
- Flaky sea salt (optional)
Instructions
- Mix peanut butter and maple syrup: In a bowl, thoroughly combine the 2/3 cup peanut butter with the 2 tablespoons of maple syrup until smooth and well blended.
- Add oats: Stir in the 3/4 cup rolled oats until the mixture is fully combined and holds together.
- Form the base: Spoon about 2 tablespoons of the oat mixture into each silicon mold or liner. Press down firmly with a spoon or cookie scoop to create an even base layer.
- Prepare the topping: Either add a plain dollop of 1 tablespoon peanut butter on top of each oat cup, or mix together 1/2 cup peanut butter with 3 tablespoons protein powder until smooth, then spread this mixture evenly over each base layer. Freeze for 20 minutes to set.
- Melt chocolate: While the oat cups freeze, melt 1 cup chocolate chips with 2 teaspoons oil in the microwave, heating in 30-second intervals and stirring well between each until fully melted and smooth.
- Add chocolate topping: Remove the cups from the freezer and spoon the melted chocolate evenly over each one. Return to the freezer for approximately 20 minutes more to harden.
- Serve: Remove the oat cups from their liners, sprinkle with flaky sea salt if desired, and enjoy your nutritious and tasty peanut butter oat cups!
