Description

Peanut Butter Yogurt Bark is a simple, kid-friendly frozen snack that combines creamy vegan yogurt, rich peanut butter, sweet banana slices, crunchy peanuts, and decadent dark chocolate. Ready in just 5 minutes of prep time, this healthy treat freezes into a delightful bark perfect for a quick energy boost or satisfying dessert.

Ingredients

Base Mixture

  • 1½ cups vegan yogurt (Icelandic Provisions Oat Milk Skyr recommended)
  • ½ cup peanut butter, plus more for drizzling
  • 2 tbsp maple syrup

Toppings

  • 1 banana, sliced
  • ¼ cup chopped peanuts (about 1 handful)
  • ½ cup dark chocolate chips, vegan, melted

Instructions

  1. Prepare the baking surface: Line a baking sheet with parchment paper or a reusable silicone mat to prevent sticking and easy removal of the bark.
  2. Mix the base: In a bowl, combine the vegan yogurt, peanut butter, and maple syrup thoroughly until smooth and creamy.
  3. Spread the mixture: Evenly spread the yogurt and peanut butter mixture onto the prepared baking sheet in a rectangle shape, ensuring the thickness is uniform.
  4. Add toppings: Arrange the sliced banana and chopped peanuts on top of the spread mixture evenly.
  5. Drizzle chocolate and peanut butter: Using melted dark chocolate chips and extra peanut butter, drizzle over the top of the bark for added flavor and texture.
  6. Freeze: Place the baking sheet in the freezer and allow the bark to harden for at least 4 hours.
  7. Slice and store: Once frozen solid, slice the bark into desired pieces (about 8 pieces) and store in an airtight container or ziplock bag in the freezer for up to four months.

Notes

  • Use vegan yogurt and dark chocolate chips to keep this recipe vegan and dairy-free.
  • To avoid sticking, ensure parchment paper is well-secured to the baking sheet.
  • Adjust the thickness of the bark according to your preference; thinner bark will freeze faster but be more fragile.
  • For added crunch, roast the peanuts lightly before chopping.
  • This bark can be customized with different nut butters or fruit toppings as desired.
  • Store the bark in the freezer and allow a few minutes at room temperature before eating for easier biting.
