Description
Possum Pie is a classic Southern layered dessert with a nutty pecan crust, creamy cheesecake filling, rich chocolate pudding, and fluffy whipped cream topping. Despite its name, it contains no possum—just indulgent flavors and textures in every bite.

- 3/4 cup pecans (ground)
- 1 1/2 cups all-purpose flour
- 1/2 tsp salt
- 1/3 cup sugar
- 8 oz cream cheese (softened)
- 1/2 cup powdered sugar
- 1 Tbsp milk
- 1 tsp vanilla extract
- 3/4 cup sugar
- 3 Tbsp cornstarch
- 1/4 tsp salt
- 1 1/2 cups milk
- 2 egg yolks
- 4 oz bittersweet chocolate (chopped)
- 1 tsp vanilla extract
- 2 Tbsp butter
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, combine ground pecans, flour, salt, sugar, and melted butter. Press into a deep-dish pie plate to form the crust. Blind bake until golden brown, then let it cool completely.
- Beat together cream cheese, powdered sugar, milk, and vanilla until smooth. Spread evenly over the cooled crust.
- In a saucepan over medium heat, whisk sugar, cornstarch, salt, milk, and egg yolks until thickened and bubbling. Remove from heat, then stir in chocolate, vanilla, and butter until smooth.
- Pour the pudding mixture over the cream cheese layer. Chill for at least 4 hours or until firm.
- Before serving, whip heavy cream, powdered sugar, and vanilla until stiff peaks form. Spread over the pie.
- Optional: Garnish with toasted, chopped pecans or shaved chocolate.
Notes
- Chill at least 4 hours before serving; overnight is even better.
- Store covered in the refrigerator for up to 4 days.
- Do not freeze, as creamy layers may separate.
- You can substitute store-bought pudding mix or Cool Whip for convenience.
- For a gluten-free version, use a gluten-free flour blend in the crust.
