Description

Possum Pie is a classic Southern layered dessert with a nutty pecan crust, creamy cheesecake filling, rich chocolate pudding, and fluffy whipped cream topping. Despite its name, it contains no possum—just indulgent flavors and textures in every bite.


Ingredients

    • 1/2 cup butter (melted)
    • 3/4 cup pecans (ground)
    • 1 1/2 cups all-purpose flour
    • 1/2 tsp salt
    • 1/3 cup sugar
    • 8 oz cream cheese (softened)
    • 1/2 cup powdered sugar
    • 1 Tbsp milk
    • 1 tsp vanilla extract
    • 3/4 cup sugar
    • 3 Tbsp cornstarch
    • 1/4 tsp salt
    • 1 1/2 cups milk
    • 2 egg yolks
    • 4 oz bittersweet chocolate (chopped)
    • 1 tsp vanilla extract
    • 2 Tbsp butter
    • 1 cup heavy cream
    • 1/4 cup powdered sugar
    • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, combine ground pecans, flour, salt, sugar, and melted butter. Press into a deep-dish pie plate to form the crust. Blind bake until golden brown, then let it cool completely.
  3. Beat together cream cheese, powdered sugar, milk, and vanilla until smooth. Spread evenly over the cooled crust.
  4. In a saucepan over medium heat, whisk sugar, cornstarch, salt, milk, and egg yolks until thickened and bubbling. Remove from heat, then stir in chocolate, vanilla, and butter until smooth.
  5. Pour the pudding mixture over the cream cheese layer. Chill for at least 4 hours or until firm.
  6. Before serving, whip heavy cream, powdered sugar, and vanilla until stiff peaks form. Spread over the pie.
  7. Optional: Garnish with toasted, chopped pecans or shaved chocolate.

Notes

  • Chill at least 4 hours before serving; overnight is even better.
  • Store covered in the refrigerator for up to 4 days.
  • Do not freeze, as creamy layers may separate.
  • You can substitute store-bought pudding mix or Cool Whip for convenience.
  • For a gluten-free version, use a gluten-free flour blend in the crust.
