Description

Pumpkin Lush is a creamy no-bake layered dessert with a buttery cinnamon graham cracker crust, a smooth cheesecake layer, a spiced pumpkin pudding layer, and fluffy whipped topping. Perfect for fall gatherings and holiday celebrations.


Ingredients

2 cups cinnamon graham crackers, crushed

1/2 cup butter, melted

8 oz cream cheese, softened

1 cup confectioners sugar

12 oz whipped topping, thawed and divided

1 1/2 cups evaporated milk

1 1/2 cups pumpkin puree

1 package (5.1 oz) instant vanilla pudding mix

2 tsp pumpkin pie spice


Instructions

  1. In a medium bowl, combine crushed graham crackers with melted butter and press evenly into the bottom of a 9-inch square baking dish.
  2. In a large bowl, beat cream cheese and confectioners sugar until smooth. Fold in 1 cup of whipped topping and spread over the crust.
  3. In another bowl, whisk together evaporated milk, pumpkin puree, pudding mix, and pumpkin pie spice until smooth. Spread over the cream cheese layer.
  4. Top with remaining whipped topping, spreading evenly.
  5. Refrigerate for at least 4 hours or overnight before serving.
  6. Sprinkle with extra crushed graham crackers if desired before serving.

Notes

For variety, substitute gingersnaps or Oreos for the crust.

Add caramel drizzle on top for extra indulgence.

Use reduced-fat cream cheese and light whipped topping for a lighter version.

Can be enjoyed frozen for a refreshing twist.
