Ingredients
2 cups cinnamon graham crackers, crushed
1/2 cup butter, melted
8 oz cream cheese, softened
1 cup confectioners sugar
12 oz whipped topping, thawed and divided
1 1/2 cups evaporated milk
1 1/2 cups pumpkin puree
1 package (5.1 oz) instant vanilla pudding mix
2 tsp pumpkin pie spice
Instructions
- In a medium bowl, combine crushed graham crackers with melted butter and press evenly into the bottom of a 9-inch square baking dish.
- In a large bowl, beat cream cheese and confectioners sugar until smooth. Fold in 1 cup of whipped topping and spread over the crust.
- In another bowl, whisk together evaporated milk, pumpkin puree, pudding mix, and pumpkin pie spice until smooth. Spread over the cream cheese layer.
- Top with remaining whipped topping, spreading evenly.
- Refrigerate for at least 4 hours or overnight before serving.
- Sprinkle with extra crushed graham crackers if desired before serving.
Notes
For variety, substitute gingersnaps or Oreos for the crust.
Add caramel drizzle on top for extra indulgence.
Use reduced-fat cream cheese and light whipped topping for a lighter version.
