Description

Pumpkin quesadillas are a fun, festive treat featuring gooey melted cheese inside crispy flatbread carved like jack-o’-lanterns.


Ingredients

6 Foldit® Artisan Flatbread

4 oz mozzarella cheese or Monterey Jack, thinly sliced

4 oz cheddar cheese, thinly sliced


Instructions

  1. Preheat your oven to 425°F.
  2. Use a sharp paring knife to cut jack-o’-lantern faces into one side of each flatbread. Save the larger cutout pieces to create stems if desired.
  3. On the uncut side of the flatbread, layer the mozzarella or Monterey Jack cheese, then add cheddar cheese.
  4. Fold the flatbread so the cheese layers are inside and the cheddar faces the cutouts.
  5. Place the folded quesadillas on a baking sheet and bake for 3–5 minutes, or until the cheese is melty and the flatbread is slightly crispy.
  6. Remove from oven and gently press on the face cutouts so the melted cheese oozes through.
  7. Serve warm and enjoy!
