Ingredients

Eggs

  • 2 eggs, whisked

Vegetables

  • 2 medium carrots, peeled and diced

  • 3 green onions, thinly sliced

Quinoa

  • 4 cups cooked and chilled quinoa

Instructions

  1. Scramble the eggs: Heat 1/2 tablespoon of butter in a large skillet over medium-high heat until melted. Add the whisked eggs and cook, stirring occasionally, until scrambled and fully cooked. Remove the eggs from the skillet and transfer to a separate plate.
  2. Sauté the vegetables: Add 1 tablespoon of butter to the same skillet and melt over medium-high heat. Add diced carrots, onion, peas, and minced garlic. Season generously with salt and pepper. Sauté for about 5 minutes, until the onions and carrots become soft and fragrant.
  3. Cook quinoa with sauces: Increase the heat to high, then add the remaining 1 1/2 tablespoons of butter, stirring until melted. Immediately add the cooked quinoa, sliced green onions, soy sauce, and oyster sauce if using. Stir continuously for about 3 minutes to heat through and allow the flavors to meld.
  4. Combine eggs and finish: Return the scrambled eggs to the skillet and stir to incorporate evenly throughout the quinoa mixture. Drizzle the toasted sesame oil over the top, stir once more, then remove from heat.
