Description
A simple and flavorful recipe for roasted broccoli and carrots, seasoned with Italian herbs, garlic, onion powder, and parmesan cheese, then perfectly roasted to tender and slightly browned perfection. Ideal as a healthy side dish for any meal.
Ingredients
Vegetables
- 5 cups broccoli florets
- 2 cups thinly sliced carrots (around 4-5 medium carrots peeled)
Seasonings
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- ¼ teaspoon onion powder
- 2 tablespoons powdered parmesan cheese
- ½ teaspoon salt
Others
- 3 tablespoons olive oil
Instructions
- Prepare the Vegetables: In a large bowl, combine the broccoli florets, thinly sliced carrots, Italian seasoning, garlic powder, onion powder, powdered parmesan cheese, salt, and olive oil. Toss everything thoroughly to ensure the oil and spices coat the vegetables evenly.
- Arrange for Roasting: Line a baking sheet with parchment paper. Spread the coated broccoli and carrots in a single, even layer on the sheet to promote even roasting and browning.
- Roast the Vegetables: Place the baking sheet in a preheated oven at 400°F (204°C). Roast the vegetables for 15 minutes, then stir and flip them to ensure even cooking. Continue roasting for another 10-15 minutes or until the edges are browned and vegetables are tender when pierced with a fork.
Notes
- For extra crispiness, avoid overcrowding the baking sheet.
- You can substitute powdered parmesan with grated fresh parmesan for a more intense cheese flavor.
- Adjust seasoning according to your taste preferences.
- Serve immediately for best texture and flavor.
