Roasted cabbage steaks are a delicious and versatile way to enjoy cabbage, ideal as a flavorful side dish or a light main course. These thick slices of cabbage are roasted until tender with crispy edges, seasoned simply with olive oil, garlic powder, salt, and pepper. - 1 head of cabbage
- 2 tablespoons extra virgin olive oil
- 1 teaspoon garlic powder
- ½ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
Instructions
- Slice the cabbage: Preheat the oven to 400°F (200°C). Cut the bottom off the cabbage and stand it upright with the flat end on the cutting board. Slice the cabbage into 1-inch thick steaks.
- Arrange and season on a baking sheet: Place the cabbage steaks in a single layer on a baking sheet. Brush both sides with extra virgin olive oil, then sprinkle evenly with garlic powder, kosher salt, and freshly ground black pepper.
- Roast the cabbage steaks: Roast in the preheated oven for 40 to 45 minutes, turning the pan halfway through to ensure even cooking. Continue until the edges are crispy and the centers are tender. The exterior may appear slightly dry but the interior will be soft.
- Optional finishing touch: In the last 5 minutes of roasting, optionally sprinkle freshly grated Parmesan cheese over the cabbage steaks to add a rich garlic Parmesan flavor.
Notes
- A medium head of cabbage usually yields 4 good round steaks and a couple of smaller end pieces.
- Despite a slightly dry appearance on the outside, the inside of the steaks will be soft and tender.
- Adding Parmesan in the last 5 minutes enhances flavor with a garlicky, cheesy addition.
