Description

These indulgent Salted Caramel Truffles are rich, creamy, and bursting with decadent chocolate and salted caramel flavors. Perfect as a luxurious treat or elegant gift, these truffles combine smooth ganache with a dusting of cocoa powder for a delightful finish.

Ingredients

Ganache

  • 200 g dark chocolate, finely chopped
  • 4 tablespoons caramel sauce (homemade or shop-bought)
  • 4 tablespoons double cream
  • 75 g unsalted butter, cubed
  • 2 teaspoons flaky sea salt

Coating

  • 4 tablespoons cocoa powder, sifted

Instructions

  1. Prepare the Chocolate: Place the finely chopped dark chocolate in a large heatproof bowl and set it aside to be ready for the ganache.
  2. Heat Caramel Mixture: In a small saucepan over medium heat, combine caramel sauce, double cream, cubed unsalted butter, and flaky sea salt. Heat gently until the butter melts completely and the mixture starts to steam, but avoid boiling.
  3. Create Ganache: Remove the caramel mixture from heat and slowly pour it over the chopped chocolate without stirring. Let it rest for one minute, then gently stir from the center outward using a fork until the ganache is smooth, thick, and glossy. Cover the ganache’s surface directly with baking parchment to prevent a skin forming and refrigerate for about 2 hours to harden.
  4. Form Truffles: Once the ganache is firm, place the sifted cocoa powder on a plate or board. Use a teaspoon to scoop portions of ganache, roll them quickly between your hands into balls, then coat them thoroughly in cocoa powder. You may also opt to roll them in nuts or sprinkles if desired.
  5. Chill and Serve: Transfer the coated truffles to a plate or tray and refrigerate for an additional 1–2 hours until fully set. Enjoy your beautifully rich salted caramel truffles chilled.

Notes

  • Use good quality dark chocolate for the best flavor and texture.
  • If you prefer a less salty taste, reduce the flaky sea salt to 1 teaspoon.
  • You can substitute cocoa powder coating with chopped nuts or chocolate sprinkles for variety.
  • Store truffles in an airtight container in the refrigerator for up to one week.
  • Allow truffles to come to room temperature a few minutes before serving for the best creamy experience.
