Sausage Gravy Breakfast Burritos are a hearty and comforting breakfast featuring rich homemade sausage gravy, fluffy scrambled eggs, and melted cheddar cheese wrapped in warm flour tortillas. Perfect for busy mornings or meal prep, these burritos can be enjoyed fresh or frozen for later.
Ingredients
1 pound ground beef (85/15 fat ratio recommended)
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon rubbed sage
1 teaspoon salt
1/2 teaspoon pepper (more to taste)
1/4 cup flour
3 cups milk
12 eggs
1/4 cup water or milk
2 tablespoons butter
7–10 large flour tortillas
Shredded cheddar cheese
Instructions
- In a mixing bowl, combine ground beef with garlic powder, onion powder, sage, salt, and pepper. Mix thoroughly and refrigerate for 10 minutes.
- Heat a large skillet over medium-high heat and cook the sausage mixture for 8–10 minutes until browned. Do not drain the fat.
- Stir in the flour and cook for 2–3 minutes. Gradually add milk while stirring until the gravy thickens, about 3–5 minutes. Season to taste and keep warm.
- Whisk eggs with water or milk in a bowl. Melt butter in a skillet over medium heat, then reduce to medium-low. Add the eggs and gently stir until fluffy and fully scrambled. Set aside.
- Warm tortillas in the microwave for 30 seconds to make pliable.
- To assemble, place scrambled eggs in the center of each tortilla, spoon sausage gravy over them, and sprinkle with shredded cheddar cheese.
- Fold and wrap burritos tightly. Serve immediately, refrigerate for up to 3–4 days, or freeze for up to 2 months.
