Description

Ingredients

Shrimp and Citrus Marinade

  • 1 pound raw shrimp, peeled and deveined
  • 2 limes, divided
  • 1 lemon

Mix-ins

  • 1 large tomato or 2 small tomatoes, chopped
  • 1/3 cup diced red onion
  • 2 tablespoons chopped cilantro
  • 1 tablespoon diced jalapeno (optional)
  • 1 clove garlic, minced
  • Salt and pepper, to taste


Instructions

  1. Prepare Shrimp: Chop the raw shrimp into small bite-sized pieces, about ¼ to ½ inch. Place the chopped shrimp in a medium bowl.
  2. Marinate Shrimp: Squeeze one lime and one lemon over the chopped shrimp, reserving the second lime for later use. Toss to combine, then cover the bowl with plastic wrap and refrigerate for at least one hour, allowing the shrimp to ‘cook’ in the citrus juice.
  3. Prepare Vegetables and Herbs: While the shrimp marinates, chop tomatoes and red onion into ¼ inch pieces, removing as much tomato seed jelly as possible. Chop the cilantro, finely dice the jalapeño pepper, and mince the garlic.
  4. Drain and Refresh: After marinating, drain off and discard the citrus juice from the shrimp. Squeeze the reserved second lime over the shrimp for fresh citrus flavor.
  5. Combine Ingredients: Add the chopped tomatoes, red onion, cilantro, jalapeño, and garlic to the shrimp. Season with a generous pinch of salt and pepper. Toss everything thoroughly to combine.
  6. Adjust Seasoning and Chill: Taste and adjust salt and pepper as needed. Cover and refrigerate the ceviche until ready to serve, allowing flavors to meld.
