Crust
- 9 Oreos, crushed into fine crumbs
- 2 tablespoons (26g) salted butter, melted

- 5 Oreos, finely chopped
- 1/4 cup heavy cream
- 4 ounces cream cheese, softened
- 3 heaping tablespoons (42g) granulated sugar
- 1/2 teaspoon vanilla bean paste

Instructions
- Prepare the baking dish: Line your baking dish with parchment paper, securing the edges with binder clips or clothes pins to keep it in place. Set aside while you prepare the crust.
- Make the crust: Place 9 Oreos in a plastic bag and crush them into fine crumbs using a rolling pin or the bottom of a glass. Transfer crumbs to a medium bowl and stir in melted butter until well combined. Press this mixture evenly into the bottom of the prepared baking dish to form the crust.
- Whip the cream: In a medium bowl, use a handheld electric mixer to beat the heavy cream until stiff peaks form. The peaks should stand straight up when the beaters are lifted. Set aside for folding later.
- Prepare the cheesecake filling: In another medium bowl, beat the softened cream cheese with granulated sugar and vanilla bean paste until smooth and well combined. Gently fold in the whipped cream and the finely chopped 5 Oreos, being careful not to deflate the whipped cream to maintain a light texture.
- Assemble and chill: Spread the cheesecake filling evenly over the prepared Oreo crust in the baking dish. Cover and place in the freezer for about 3 hours until firm.
