Description

Smash burgers are juicy, flavorful, and crispy-edged burgers made by pressing beef patties onto a hot skillet. Served with toasted buns, melted cheese, and classic toppings, they’re quick to make and perfect for a weeknight dinner or cookout.


Ingredients

1 lb ground beef (80/20 blend)

4 hamburger buns

4 slices American cheese

1 tablespoon unsalted butter

1 small onion, thinly sliced

Kosher salt and black pepper, to taste

2 tablespoons mayonnaise

Sliced pickles, for serving

Shredded lettuce, for serving

Tomato slices, for serving


Instructions

  1. Divide the ground beef into 4 equal portions and loosely shape them into balls. Season with salt and pepper.
  2. Heat a cast iron skillet or griddle over medium-high heat. Add butter and swirl to coat.
  3. Place beef balls on the skillet. Using a sturdy spatula, smash each ball into a thin patty. Cook for 2-3 minutes until the edges are crispy.
  4. Top each patty with onions, flip, and cook for another 1-2 minutes. Add cheese to each patty and let it melt.
  5. Toast hamburger buns on the skillet until golden. Spread mayonnaise on the bottom buns.
  6. Assemble burgers with cheesy patties, pickles, lettuce, and tomato. Serve immediately.

Notes

Double up patties for a heartier burger.

Swap cheese types for variety (cheddar, Swiss, pepper jack).

Use caramelized onions for a sweeter flavor.

Add jalapeños or spicy mayo for extra heat.
