Ingredients
Dates and Filling
- 12 Medjool dates, pitted
- 3 tablespoons peanut butter
- 3 tablespoons chopped peanuts, plus extra for topping if desired
Chocolate Coating
- 11.5 ounces extra dark chocolate chips
- 2 teaspoons coconut oil
- Flaky salt for topping
Instructions
- Prepare Date Base: Line a small pan or a freezer-safe plate with parchment paper and set aside for placing the coated dates later.
- Slice Dates: If the Medjool dates are not pre-sliced, use a paring knife to make a lengthwise slice down one side and butterfly them open carefully.
- Fill Dates: Fill a piping bag with peanut butter and cut off the tip. Pipe the peanut butter into one side of each date, then sprinkle the chopped peanuts on top for crunch. Close the dates back and secure them with a toothpick to keep the filling inside.
- Melt Chocolate: Place the extra dark chocolate chips and coconut oil in a deep, wide-mouthed glass bowl or container. Melt the mixture in the microwave at 30-second intervals, stirring well between each interval until the chocolate is fully melted and smooth.
- Dip Dates: Using the toothpicks as handles, dip each stuffed date into the melted chocolate, ensuring they’re fully coated. Place the dipped dates onto the parchment paper to set. Use a second toothpick to carefully remove the original toothpicks.
- Finish Toppings: Sprinkle additional chopped peanuts and flaky salt on top of the chocolate-coated dates. Optionally, drizzle extra melted chocolate over the top for an elegant finish.
- Chill: Transfer the tray of dipped dates to the freezer and chill for 15 minutes or until the chocolate has completely set. Serve chilled or at room temperature.
Notes
- You can substitute chocolate melting wafers instead of chocolate chips; in that case, omit the coconut oil as wafers melt more smoothly alone.
- Use sugar-free peanut butter if you need to reduce sugar; the dates provide natural sweetness.
- For vegan variation, select dairy-free chocolate chips and ensure peanut butter contains no animal products.
- Flaky salt is highly recommended to enhance the sweet and salty contrast, mimicking authentic Snickers flavor. Omitting salt may result in a predominantly sweet and slightly bitter taste due to the dark chocolate.
