Ingredients
4 Salmon Fillets (about 1 lb total)
1 teaspoon Paprika
1 teaspoon Garlic Powder
Salt & Pepper to taste
1 tablespoon Lemon Juice
1 tablespoon Olive Oil
1 bunch Asparagus, trimmed
½ cup Mozzarella Cheese, shredded
½ teaspoon Garlic Powder
1 tablespoon Olive Oil
1 pound Baby Potatoes, halved
2 tablespoons Butter, melted
2 tablespoons Fresh Parsley, chopped
2 cloves Garlic, minced
Salt & Pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Pat the salmon fillets dry with a paper towel. Rub them with olive oil, paprika, garlic powder, salt, pepper, and lemon juice. Arrange on a parchment-lined baking sheet.
- Toss the asparagus with olive oil, garlic powder, salt, and pepper. Lay next to the salmon and sprinkle mozzarella on top.
- In a separate bowl, toss the halved potatoes with melted butter, minced garlic, salt, and pepper. Spread on a baking sheet in a single layer.
- Roast the salmon and asparagus for 15–18 minutes, until salmon flakes easily and cheese is golden.
- Roast the potatoes for 25–30 minutes, flipping halfway, until golden and crispy.
- Plate the salmon, cheesy asparagus, and garlic herb potatoes. Garnish potatoes with fresh parsley and serve immediately.
Notes
Vegetarian option: Replace salmon with extra veggies like zucchini or bell peppers.
For extra spice, add a pinch of cayenne pepper to the salmon rub.
Try Parmesan or cheddar instead of mozzarella for the asparagus.
Use an air fryer for faster cooking.
