Ingredients
1 (8 oz) block cream cheese, softened
1/2 cup grated parmesan cheese
1 tsp garlic powder
1 tsp onion powder
1 tsp Italian seasoning
2 eggs, divided
1 tsp salt
1/2 tsp pepper
1 (10 oz) bag frozen spinach, thawed and drained
1 (2-count) box frozen puff pastry sheets, thawed
Instructions
- Preheat oven to 400°F (200°C) and line two baking trays with parchment paper.
- In a bowl, combine cream cheese, parmesan, garlic powder, onion powder, Italian seasoning, 1 egg, salt, and pepper.
- Soak thawed spinach in hot water for 2 minutes, then drain and squeeze out excess liquid.
- Add spinach to the cheese mixture and stir to combine.
- Unroll one puff pastry sheet at a time and cut each into 9 equal squares.
- Turn squares diagonally like diamonds, place filling in the center, leaving space on edges.
- Place filled squares on baking trays. Brush one corner with whisked egg, fold over filling, then fold the egg-washed corner over and press to seal.
- Brush tops with remaining egg and sprinkle with parmesan.
- Bake for 18–20 minutes until golden brown and crispy. Serve warm.
Notes
- Customize with fresh herbs like basil, thyme, or parsley.
- Swap parmesan for cheddar, feta, or mozzarella.
- Use fresh spinach sautéed and drained instead of frozen.
- These can be frozen before baking for make-ahead appetizers.
- For best texture, reheat in the oven instead of the microwave.
