Ingredients
Flatbread Base
- 1 flatbread (4″ x 8″)
- 1 tablespoon olive oil
Toppings
- 1 small shallot, minced
- 3 cloves garlic, minced
- 1/2 cup whole milk ricotta cheese
- 2 cups fresh spinach
- ½ cup shredded mozzarella cheese
- ¼ cup crumbled feta cheese
- Crushed red pepper flakes, to taste
- Salt and pepper, to taste
Instructions
- Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to ensure it is hot enough to crisp the flatbread and melt the cheese.
- Sauté Shallots and Garlic: Heat olive oil over medium heat in a large skillet, then add the minced shallot and garlic. Sauté for about 3 minutes until they begin to soften and release their aroma.
- Cook Spinach: Add the fresh spinach to the skillet with the shallots and garlic, cooking for an additional minute just until the spinach wilts. Remove the skillet from heat to prevent overcooking.
- Prepare Flatbread: Place the flatbread on a baking sheet lined with parchment paper for easy cleanup and to prevent sticking.
- Add Toppings: Evenly spread the ricotta cheese over the flatbread, followed by the sautéed shallots, garlic, and spinach mixture. Sprinkle shredded mozzarella and crumbled feta cheese on top.
- Bake Flatbread: Bake in the preheated oven for 8 to 10 minutes, or until the edges of the flatbread are crispy and the mozzarella cheese has melted and turned slightly golden.
- Season and Serve: Remove from the oven and sprinkle with crushed red pepper flakes for a touch of heat. Season with salt and freshly ground black pepper to taste. Slice and serve warm.
Notes
- For a crispier crust, you can pre-toast the flatbread for 2-3 minutes before adding toppings.
- Feel free to substitute fresh spinach with baby spinach or kale for a different texture.
- Adjust the amount of crushed red pepper flakes to suit your spice preference.
- This flatbread can be served as a snack, appetizer, or light meal paired with a fresh salad.
