Flatbread Base

  • 1/2 cup whole milk ricotta cheese
  • 2 cups fresh spinach
  • ½ cup shredded mozzarella cheese
  • ¼ cup crumbled feta cheese
  • Crushed red pepper flakes, to taste
  • Salt and pepper, to taste


Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to ensure it is hot enough to crisp the flatbread and melt the cheese.
  2. Sauté Shallots and Garlic: Heat olive oil over medium heat in a large skillet, then add the minced shallot and garlic. Sauté for about 3 minutes until they begin to soften and release their aroma.
  3. Cook Spinach: Add the fresh spinach to the skillet with the shallots and garlic, cooking for an additional minute just until the spinach wilts. Remove the skillet from heat to prevent overcooking.
  4. Prepare Flatbread: Place the flatbread on a baking sheet lined with parchment paper for easy cleanup and to prevent sticking.
  5. Add Toppings: Evenly spread the ricotta cheese over the flatbread, followed by the sautéed shallots, garlic, and spinach mixture. Sprinkle shredded mozzarella and crumbled feta cheese on top.
