Description

Delight in these creamy and refreshing Strawberry Yogurt Popsicles, a perfect healthy treat combining fresh strawberries, creamy Greek yogurt, and a hint of honey. These popsicles are easy to make, require minimal ingredients, and are a wholesome way to cool down on a warm day.

Ingredients

Fruits and Dairy

  • 1 cup strawberries, washed, dried, and hulls removed
  • 1/2 cup plain or vanilla Greek yogurt
  • 2 oz. light cream cheese
  • 1/2 cup milk (regular or almond milk)

Flavorings

  • 1 Tablespoon honey
  • 1 teaspoon vanilla extract (if using plain Greek yogurt)

Instructions

  1. Blend Ingredients: Combine the strawberries, Greek yogurt, light cream cheese, milk, honey, and vanilla extract (if using plain yogurt) in a blender. Puree the mixture until it becomes completely smooth, ensuring an even texture in the popsicles.
  2. Pour into Molds: Carefully pour the blended mixture into popsicle molds or alternatively into four to six paper or plastic cups to create individual portions.
  3. Insert Sticks: Place popsicle sticks into the center of each mold or cup to prepare them for freezing.
  4. Freeze Until Firm: Transfer the molds or cups to the freezer. Allow them to freeze for 4 to 6 hours, or until completely firm and ready to enjoy.

Notes

  • For a vegan version, substitute Greek yogurt and cream cheese with plant-based alternatives.
  • If you use vanilla Greek yogurt, you can omit the vanilla extract for simplicity.
  • To avoid icy texture, make sure the mixture is well blended and smooth before freezing.
  • Allow popsicles to sit at room temperature for a couple of minutes before removing from molds for easier handling.
  • Honey can be adjusted or replaced with maple syrup to suit your sweetness preference.
