Stuffed Mashed Potato Nests are golden, crispy potato cups filled with savory beef, herbs, and vegetables, topped with gooey mozzarella. This comforting yet elegant dish offers a perfect balance of textures and flavors, making it ideal for family dinners or entertaining guests.
Ingredients
3–5 large potatoes
3.5 tbsp (50 g) unsalted butter
A bunch of fresh dill, finely chopped
Salt, smoked paprika, black pepper, oregano (to taste)
1.1 lbs (500 g) ground beef
1 medium onion, finely diced
2 garlic cloves, minced
1 red bell pepper, chopped
1 large tomato, diced
2.5 oz (70 g) tomato paste
A bunch of fresh parsley, finely chopped
3.5 oz (100 g) mozzarella cheese, shredded
Instructions
- Peel and cube the potatoes, then boil in salted water until fork tender (15–20 minutes). Drain and cool slightly.
- Mash potatoes with butter until smooth. Stir in dill, smoked paprika, salt, black pepper, and oregano. Adjust seasoning.
- In a skillet, cook ground beef until browned. Add onion and garlic, sauté until softened.
- Stir in bell pepper and tomato, cooking for 5 minutes.
- Mix in tomato paste and parsley. Remove from heat.
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Shape mashed potatoes into nests on the sheet, pressing centers to form wells.
- Fill each nest with beef mixture, top with mozzarella, and bake for 15 minutes until cheese melts.
- For a crispier finish, broil for 2–3 minutes.
Notes
Swap beef with chicken, turkey, or lamb for variation.
Make it vegetarian by using mushrooms, lentils, or chickpeas.
Add extra cheeses like cheddar or gouda for a bolder flavor.
Chill mashed potatoes before shaping to help them hold better.
Freeze unbaked nests without cheese for up to 2 months.
