Description

A vibrant and flavorful Sweet Chilli Halloumi Wrap recipe combining golden-fried halloumi marinated in sweet chilli sauce with fresh cucumber, carrot, and a creamy homemade tzatziki. This quick and easy wrap is perfect for a light lunch or dinner, offering a delightful balance of spicy, tangy, and fresh flavors wrapped in a soft tortilla.


Ingredients

Halloumi and Marinade

  • 225 g low fat halloumi, thinly sliced
  • 1 tbsp sweet chilli sauce
  • Red pepper flakes/chilli flakes, pinch (optional)

Tzatziki

  • 200 ml Greek yogurt
  • cucumber, grated
  • ½ lime, juiced
  • Salt, generous pinch

Wrap Fillings

  • cucumber, thinly sliced
  • 1 carrot, grated or sliced into matchstick pieces
  • 2 heads baby gem lettuce (about 6 leaves)
  • 1 bunch coriander
  • 1 clove garlic, minced

Other

  • 4 large white wraps
  • 1 tbsp rapeseed oil
  • Salt & Pepper, to taste


Instructions

  1. Marinate the Halloumi: Place the thinly sliced halloumi into a bowl and coat evenly with 1 tablespoon of sweet chilli sauce. Add a pinch of red pepper flakes if you prefer some heat. Mix well and let it marinate for at least 15 minutes, or up to 24 hours in the refrigerator for deeper flavor.
  2. Fry the Halloumi: Heat 1 tablespoon of rapeseed oil in a non-stick frying pan over medium heat. Add the marinated halloumi slices and cook for about 2 minutes on each side until golden brown. Add the minced garlic to the pan halfway through to infuse flavor without burning. Season with salt and pepper as desired.
  3. Prepare the Tzatziki: While the halloumi fries, combine 200 ml Greek yogurt, grated cucumber, lime juice, and a generous pinch of salt in a bowl. Mix thoroughly to create a creamy and tangy tzatziki sauce.
  4. Assemble the Wrap: Lay out each large white wrap flat. Spread a big dollop of tzatziki in the middle and spread evenly. Layer about three leaves of baby gem lettuce, sliced cucumber, and grated carrot on top of the tzatziki. Then, add the golden fried sweet chilli halloumi slices.
  5. Finish and Serve: Optionally drizzle additional sweet chilli sauce and tzatziki over the fillings. Top with fresh coriander leaves. Fold the wrap tightly to encase all the ingredients and serve immediately while the halloumi is warm.

Notes

  • Marinating the halloumi longer enhances flavor but is not mandatory.
  • Using low fat halloumi helps reduce the overall fat content.
  • You can substitute baby gem lettuce with other leafy greens like romaine or butter lettuce.
