Instructions
- Preheat Oven: Begin by preheating your oven to 400°F (200°C) to ensure it reaches the perfect temperature for baking your tart.
- Sauté Onions: Heat a bit of olive oil in a hot pan over medium heat. Add the peeled and sliced sweet onion and sauté until soft and slightly translucent. Once cooked, remove from heat and let the onions cool slightly.
- Prepare Puff Pastry: Roll out the puff pastry into a 10×10 inch square. If using store-bought pastry which comes in a rectangle, no additional rolling is necessary. Trim about ¼ to ½ inch off each side of the pastry square and save these trimmed pieces for the tart border.
- Set Pastry on Baking Sheet: Place the main puff pastry square on a baking sheet lined with parchment paper for easy cleanup.
- Make Egg Wash: In a small bowl, whisk together the egg and water to create an egg wash. Brush a thin strip of the egg wash along the perimeter edge of the puff pastry square.
- Form Tart Border: Use the trimmed pastry pieces to form a raised border around the tart, placing them on top of the egg-washed perimeter to help them stick and create a crust edge.
- Assemble Tart Filling: Evenly spread the plain Greek yogurt over the inside center of the puff pastry, inside the bordered edges. Layer the sautéed onions on top of the yogurt.
- Add Cheese and Herbs: Sprinkle the freshly grated Parmesan cheese over the onions. Follow with a sprinkle of fresh thyme, salt, and pepper to season the filling.
- Glaze Pastry: Brush the top of the pastry and border with the remaining egg wash to promote a beautiful golden color during baking.
- Bake: Place the tart into the preheated oven and bake for 20-25 minutes or until the pastry is puffed, golden, and fully cooked.
- Cool and Serve: After baking, allow the tart to cool for at least 10 minutes on a wire rack before slicing. This helps the filling set and makes serving easier.
