Instructions
- Prepare Sweet Potatoes: Preheat your oven to 400°F and line a baking sheet with parchment paper. Toss the cubed sweet potatoes in a bowl with 1 tablespoon of olive oil until they are evenly coated.
- Roast Sweet Potatoes: Spread the sweet potatoes on the baking sheet and roast in the oven for 20 to 30 minutes until tender and slightly caramelized. Alternatively, you can air fry them at 400°F for 10 minutes for a quicker option.
- Cook Bacon and Onions: While the sweet potatoes roast, heat 1 tablespoon of olive oil in a large cast iron skillet over medium heat. Add the turkey bacon and diced white onion, cooking until the bacon is crisp and onions are tender.
- Combine Ingredients: Once the sweet potatoes are done, add them to the skillet with the bacon and onions. Stir to combine and cook together for 1 to 2 minutes. Season with salt and pepper to taste.
- Broil the Eggs: Adjust your oven to the broil setting on high. Make three wells in the sweet potato mixture and crack an egg into each well. Place the skillet under the broiler and cook for 2 to 3 minutes until eggs are set to your liking.
- Garnish and Serve: Remove the skillet from the oven. Sprinkle chopped green onions on top, add any extra seasoning if desired, and serve immediately for a warm, satisfying breakfast.
