Description

This creamy and flavorful Carrot Cake Overnight Oats recipe combines the wholesome goodness of rolled oats and grated carrots with warm spices like cinnamon and nutmeg. Sweetened naturally with maple syrup and enriched with vanilla almond milk and Greek yogurt, it’s topped with melted white chocolate, coconut, raisins, and walnuts for a decadent yet healthy breakfast you can prepare the night before.

Ingredients

Overnight Oats

  • 1 cup rolled oats
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup grated carrots (finely chopped)
  • 2-3 tablespoons maple syrup
  • 1 1/2 cups vanilla almond milk
  • 1/2 cup vanilla Greek yogurt
  • 1-2 tablespoons raisins or chopped dates (optional)
  • 1-2 tablespoons shredded unsweetened coconut
  • 1-2 tablespoons chopped walnuts

Topping

  • 1 tablespoon white chocolate chips
  • 1/2 teaspoon coconut oil
  • 1/4 cup vanilla Greek yogurt

Instructions

  1. Divide Ingredients Into Jars: Divide the overnight oats ingredients evenly into two mason jars or airtight bowls to prepare individual servings.
  2. Mix the Ingredients: Mix all the overnight oats ingredients thoroughly in each jar until everything is evenly combined.
  3. Melt White Chocolate & Oil: In a microwave-safe bowl, melt the white chocolate chips and coconut oil in 30-second intervals, stirring in between until smooth and fully melted.
  4. Slow Mix In Yogurt: Gradually add the yogurt into the melted white chocolate mixture one tablespoon at a time, stirring after each addition until you achieve a smooth, creamy topping.
  5. Add Toppings to Jars: Smooth the white chocolate and yogurt topping over the prepared overnight oats jars, then sprinkle additional shredded coconut, grated carrots, and chopped walnuts on top as desired.
  6. Refrigerate Overnight: Seal the jars or bowls with lids and refrigerate overnight to allow the oats to soak and flavors to meld perfectly.
  7. Enjoy in the Morning: Remove from the fridge the next day and enjoy a delicious, nutritious carrot cake-inspired breakfast ready to eat.

Notes

  • For a vegan version, substitute Greek yogurt with plant-based yogurt.
  • You can adjust the sweetness by varying the amount of maple syrup.
  • Feel free to add more nuts or dried fruit to customize flavor and texture.
  • Using mason jars makes this recipe perfect for easy meal prep and grab-and-go breakfasts.
  • White chocolate topping can be omitted or replaced with nut butter for a different twist.
