Ingredients

Fish

  • 1 lb tilapia fillets
  • 3 tbsp butter
  • salt and pepper, to taste
  • chopped parsley, for garnish

Sauce

  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 6 oz roasted peppers, chopped
  • 6 oz roasted peppers, pureed
  • ¾ cup heavy cream
  • ½ cup grated Parmesan cheese


Instructions

  1. Pan-Fry the Fish: Melt 2 tablespoons of butter in a large non-stick skillet over medium heat. Season the tilapia fillets with salt and pepper, then fry them for 3 to 4 minutes on each side until cooked through and lightly golden. Remove from the skillet and set aside.
  2. Sauté Onions: In the same skillet, add the remaining 1 tablespoon of butter. Add diced onions and sauté for about 5 minutes until they become soft and translucent.
  3. Add Garlic and Roasted Peppers: Stir in minced garlic along with both chopped and pureed roasted peppers. Continue cooking the mixture for another 5 minutes, allowing the flavors to meld.
  4. Create the Creamy Sauce: Pour in the heavy cream and sprinkle the grated Parmesan cheese over the mixture. Turn off the heat and stir well. Taste the sauce and adjust seasoning with additional salt if needed.
  5. Combine Fish and Sauce: Return the cooked tilapia fillets to the skillet, gently spooning the roasted pepper sauce over the fish to coat thoroughly.
  6. Garnish and Serve: Sprinkle chopped parsley and extra grated Parmesan cheese on top of the dish for a fresh and flavorful finish. Serve immediately.
