Description

Tuna Patties are a quick, easy, and inexpensive meal perfect for hot summer days.   • 2 green onions, chopped
  • 2 Tbsp chopped parsley (optional)
  • 1 (12 oz) can chunk light tuna in water, drained
  • 1/2 cup plain breadcrumbs
  • 1 large egg
  • 2 Tbsp mayonnaise
  • 1.5 tsp lemon juice
  • 1 tsp seasoning salt
  • 2 Tbsp cooking oil


Instructions

  1. Prepare herbs and tuna: Roughly chop the parsley and green onions. Drain the canned tuna thoroughly to remove excess water.
  2. Mix ingredients: In a bowl, combine tuna, green onions, parsley, breadcrumbs, egg, mayonnaise, seasoning salt, and lemon juice. Mix gently just until ingredients are evenly combined, avoiding overmixing to keep patties tender.
  3. Form patties: Divide the mixture into four equal portions and shape each into a round patty shape, approximately 1/2 inch thick.
  4. Heat skillet and cook: Heat a large skillet over medium heat. Add the cooking oil and swirl to coat the surface evenly. Place tuna patties in the skillet and cook for about 5 minutes on each side, or until patties are golden brown and crispy on the outside.
  5. Serve: Remove the patties from skillet and serve warm, either over a bed of fresh greens or stuffed into pita bread for a delicious meal.
