- 1 (12 oz) can chunk light tuna in water, drained
- 1/2 cup plain breadcrumbs
- 1 large egg
- 2 Tbsp mayonnaise
- 1.5 tsp lemon juice
- 1 tsp seasoning salt
- 2 Tbsp cooking oil
Instructions
- Prepare herbs and tuna: Roughly chop the parsley and green onions. Drain the canned tuna thoroughly to remove excess water.
- Mix ingredients: In a bowl, combine tuna, green onions, parsley, breadcrumbs, egg, mayonnaise, seasoning salt, and lemon juice. Mix gently just until ingredients are evenly combined, avoiding overmixing to keep patties tender.
- Form patties: Divide the mixture into four equal portions and shape each into a round patty shape, approximately 1/2 inch thick.
- Heat skillet and cook: Heat a large skillet over medium heat. Add the cooking oil and swirl to coat the surface evenly. Place tuna patties in the skillet and cook for about 5 minutes on each side, or until patties are golden brown and crispy on the outside.
- Serve: Remove the patties from skillet and serve warm, either over a bed of fresh greens or stuffed into pita bread for a delicious meal.
