Ingredients
Chicken and Oils
- 1 tablespoon olive oil
- 1 pound thinly sliced chicken breasts
- Salt and pepper, to taste
- 1 tablespoon sun-dried tomato oil
Vegetables and Aromatics
- ¼ cup chopped onion
- 3 garlic cloves, minced
- 12 ounces sliced mushrooms
- ½ cup chopped sun-dried tomatoes
Tomatoes and Cheese
- 2 (15-ounce) cans fire-roasted tomatoes
- ¼ cup grated parmesan cheese
Seasonings and Garnish
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon oregano
- ¼ teaspoon thyme
- Fresh chopped basil, for garnish
Instructions
- Heat the Oil: Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
- Cook the Chicken: Season the thinly sliced chicken breasts with salt and pepper. Cook in the hot skillet for about 3 minutes on each side until seared and fully cooked. Remove the chicken from the skillet and set aside.
- Sauté Vegetables: Add 1 tablespoon sun-dried tomato oil to the same skillet along with the chopped onion, minced garlic, and sliced mushrooms. Cook until the vegetables are tender and aromatic.
- Add Tomatoes and Seasonings: Stir in chopped sun-dried tomatoes, fire-roasted tomatoes, grated parmesan cheese, salt, pepper, oregano, and thyme. Mix well to combine the sauce.
- Simmer with Chicken: Return the cooked chicken breasts to the skillet, nestling them into the sauce. Cook until the sauce bubbles and the chicken is heated through.
- Serve and Garnish: Remove from heat. Adjust seasoning with additional salt and pepper, if desired. Garnish with fresh chopped basil before serving.
Notes
- Thinly slicing the chicken breasts helps them cook quickly and evenly.
- Using sun-dried tomato oil adds extra depth and richness to the dish.
- You can substitute fresh tomatoes for fire-roasted if unavailable, but fire-roasted adds a smoky flavor.
- Serve with crusty bread or over pasta or rice to soak up the delicious sauce.
- This dish reheats well and can be stored in the refrigerator for up to 3 days.
