Ingredients

Instructions

  1. Heat the Oil: Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
  2. Cook the Chicken: Season the thinly sliced chicken breasts with salt and pepper. Cook in the hot skillet for about 3 minutes on each side until seared and fully cooked. Remove the chicken from the skillet and set aside.
  3. Sauté Vegetables: Add 1 tablespoon sun-dried tomato oil to the same skillet along with the chopped onion, minced garlic, and sliced mushrooms. Cook until the vegetables are tender and aromatic.
  4. Add Tomatoes and Seasonings: Stir in chopped sun-dried tomatoes, fire-roasted tomatoes, grated parmesan cheese, salt, pepper, oregano, and thyme. Mix well to combine the sauce.
