Ingredients
Fats and Oils
- 1 tablespoon olive oil
- 20 g (1 tablespoon) vegan butter
Vegetables and Aromatics
- 4 onions (about 450 g / 1 lb), finely sliced
- 4 garlic cloves
- 1 tablespoon fresh thyme, finely chopped
- 1 tablespoon fresh parsley, roughly chopped
Condiments and Seasonings
- 1 tablespoon dark agave syrup
- 1 tablespoon red vinegar
- Salt and pepper to taste
Dairy Alternatives and Other
- 1 x 400 ml (13.5 fl oz) can coconut milk
- 2 tablespoons nutritional yeast
Pasta
- 300 g (10.5 oz) pasta
Instructions
- Heat fats: Heat the olive oil in a large, deep pan over medium heat and melt the vegan butter in it to create a flavorful base for caramelizing the onions.
- Start frying onions: Add the finely sliced onions and toss to coat with the olive oil and vegan butter mixture. Fry for 1-2 minutes, stirring occasionally to begin softening.
- Caramelize onions slowly: Reduce heat to low-medium or low to prevent drying. Continue frying the onions for 10 minutes, stirring occasionally, adding a splash of water if they appear dry to avoid burning.
- Add sweet and acidic flavor: Stir in the dark agave syrup and red vinegar and cook for an additional 5 minutes to deepen flavor and aid the caramelization process.
- Add garlic and herbs: Mix in the minced garlic and fresh thyme. Continue cooking for another 15 to 30 minutes, stirring occasionally until the onions turn brown and start sticking slightly to the pan bottom, being careful not to burn them.
- Cook pasta: While onions caramelize, cook pasta al dente in salted boiling water following package instructions. Reserve some pasta water before draining.
- Create creamy sauce: Once onions are caramelized, stir in the coconut milk and bring to a gentle simmer. Then add the nutritional yeast and simmer for 2-3 minutes until the sauce thickens slightly.
- Combine pasta and sauce: Transfer the drained pasta into the pan with sauce and caramelized onions. Toss well to evenly coat the pasta with sauce, adding reserved pasta water if needed to loosen.
- Finish and serve: Stir in fresh parsley, season with salt and pepper to taste, and serve the pasta immediately while warm and comforting.
