Ingredients
Main Ingredients
- 1 cup dates (fresh and soft preferred)
- 1/4 cup almond flour
- 1/4 cup chocolate protein powder (Ritual recommended)
- 3 tbsp cacao powder
- 1 tsp vanilla bean paste
- 2 tbsp maple syrup (can substitute honey, agave, or almond butter)
Chocolate Coating
- 1 cup dark chocolate chips
- 1 tsp coconut oil (for melting)
Topping
- Flaky sea salt (for sprinkling)
- Additional melted chocolate for drizzle
Instructions
- Blend Dates: Place the soft dates in a food processor and blend until they form a sticky, smooth paste, ensuring the base of your brownie balls is fudgy and cohesive.
- Mix Ingredients: Add almond flour, cacao powder, chocolate protein powder, vanilla bean paste, maple syrup, and a pinch of salt to the date paste. Blend again until the mixture becomes thick, fudgy, and well combined.
- Shape Balls: Roll the mixture into bite-sized balls and arrange them on a lined tray. Freeze for 15 to 20 minutes to help the balls firm up and make the upcoming chocolate coating easier to handle.
- Melt Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Heat in 20-second intervals, stirring after each, until the chocolate is fully melted and smooth.
- Coat Balls: Using a fork, dip each frozen date ball into the melted chocolate, letting excess drip off. Place them back on the parchment-lined tray and sprinkle with flaky sea salt if desired.
- Chill to Set: Refrigerate the coated balls for 10 to 15 minutes until the chocolate hardens. Optionally, drizzle more melted chocolate over the set balls, freeze again briefly to set the drizzle, and top once more with flaky sea salt for extra texture and flavor.
Notes
- Using fresh, soft dates is key to achieving the right sticky consistency. If your dates are dry, soak them in warm water for 10 minutes before blending.
- The chocolate protein powder adds extra protein but can be substituted with regular cocoa powder if preferred.
- Freezing the balls before coating helps the chocolate set smoothly without melting the mixture inside.
- Adjust sweetness by varying the amount of maple syrup or substitute according to your dietary preferences.
- These brownie date balls are best stored in the refrigerator for up to 5 days or frozen for longer preservation.
