Description

These viral cottage cheese sweet potato beef bowls combine crispy sweet potatoes, savory spiced ground beef, creamy cottage cheese, avocado, and a drizzle of hot honey for a balanced, protein-packed meal that’s perfect for quick dinners or meal prep.

Ingredients

    • 2 small (or 1 large) sweet potato, peeled and cubed
    • 1/2 tsp garlic powder (for sweet potatoes)
    • 1/2 tsp paprika (for sweet potatoes)
    • 1/4 tsp salt (for sweet potatoes)
    • Olive oil spray
    • 1/2 pound ground beef
    • 1 tsp onion powder
    • 1/2 tsp garlic powder (for beef)
    • 1 tsp paprika (for beef)
    • 1/4 tsp chili flakes
    • 1/2 tsp salt (for beef)
    • 1 cup cottage cheese
    • 1 avocado, cubed
    • 1/2 tbsp hot honey
    • Chili flakes to taste

Instructions

  1. Peel and cube the sweet potatoes. Season with garlic powder, paprika, and salt. Spray lightly with olive oil.
  2. Cook sweet potatoes in the air fryer at 375°F (190°C) for 15 minutes, or until golden and tender.
  3. In a skillet over medium-high heat, cook ground beef with onion powder, garlic powder, paprika, chili flakes, and salt until fully cooked and browned.
  4. Divide the cooked sweet potatoes and beef evenly into two bowls.
  5. Add cubed avocado and top each bowl with 1/2 cup cottage cheese.
  6. Drizzle with hot honey and sprinkle additional chili flakes to taste. Serve immediately.

Notes

  • Add spinach or arugula for freshness.
  • Swap ground beef for turkey or chicken for a lighter option.
  • Increase chili flakes or hot sauce for extra heat.
  • Use plant-based meat and dairy-free cottage cheese for a vegan version.
  • Store leftovers in the fridge for 2–3 days. Reheat potatoes and beef, and add fresh toppings before serving.
  • Sweet potatoes can also be roasted in the oven at 400°F (200°C) for 20–25 minutes.
