Description

This Whipped Cottage Cheese Mashed Potatoes recipe offers a creamy, smooth twist on classic mashed potatoes by blending cottage cheese until silky and mixing it in for added protein and tangy flavor. Perfect as a comforting side dish, it balances the richness of butter with the freshness of herbs.

Ingredients

Potatoes

  • 5 lb. Yukon gold potatoes (rinsed and quartered)
  • 3 teaspoons sea salt (separated)

Mashed Potato Mixture

  • 11 oz. 2% cottage cheese (~1.5 cups)
  • 4 tablespoons salted butter
  • ½ cup 2% milk (or any kind of milk)
  • ½ teaspoon ground pepper

Garnish

  • Fresh parsley
  • Fresh chives

Instructions

  1. Boil the Potatoes: Place the quartered Yukon gold potatoes in a large pot and cover them with water. Add 2 teaspoons of sea salt and stir. Bring to a rolling boil over high heat.
  2. Cook Until Tender: Reduce the heat to medium and simmer the potatoes until they are fork-tender, about 15 to 20 minutes.
  3. Whip the Cottage Cheese: While the potatoes cook, put the cottage cheese in a food processor and blend until completely smooth, scraping sides as needed. This process should take between 2 to 4 minutes. Set aside the whipped cottage cheese.
  4. Mash the Potatoes: Drain the cooked potatoes and return them to the pot. Add the butter and use an electric mixer to mash the potatoes on high speed until smooth. For chunkier texture, use a traditional potato masher instead.
  5. Combine Ingredients: Stir in the whipped cottage cheese, milk, remaining 1 teaspoon salt, and ground pepper into the mashed potatoes until well combined and creamy.
  6. Garnish and Serve: Garnish the mashed potatoes with freshly chopped parsley and chives. Serve immediately while warm for best flavor and texture.

Notes

  • Using Yukon gold potatoes provides a naturally creamy texture perfect for mashed potatoes.
  • Whipping the cottage cheese makes it smooth and prevents lumps in the mash.
  • You can substitute milk with any preferred dairy or non-dairy milk.
  • Adjust salt and pepper to taste for seasoning balance.
  • Make mashed potatoes ahead and reheat gently to avoid drying out.
