Instructions

  1. Prepare the zucchini: Shred the zucchini using a grater and then squeeze out the excess water thoroughly using cheesecloth. Removing as much liquid as possible is essential to achieve crispy fritters in the air fryer.
  2. Mix the batter: Transfer the shredded zucchini to a large bowl. Add the egg, all-purpose flour, baking powder, salt, Italian seasoning, red pepper flakes, garlic powder, and black pepper. Mix everything until well combined to form a coherent batter.
  3. Preheat the air fryer: Set your air fryer to 350°F (175°C) and allow it to preheat for about 5 minutes to ensure even cooking.
  4. Form the patties: While the air fryer is preheating, take portions of the zucchini mixture and roll them into balls, then flatten each ball on a cutting board to form 9–10 patties of equal size.
