Instructions
- Preheat and Prepare Pan: Preheat your oven to 350 degrees Fahrenheit. Lightly spray a 9×5 inch loaf pan with cooking spray to prevent sticking, then set it aside.
- Mix Dry Ingredients: In a large bowl, combine the oats, all-purpose flour, granulated sugar, baking powder, baking soda, salt, and ground cinnamon. Stir well until all ingredients are evenly mixed.
- Prepare Wet Ingredients: In a separate medium bowl, whisk together the milk, apple sauce, vanilla flavoring, eggs, and canola oil until the mixture is smooth and well blended.
- Combine Batter: Add the wet ingredient mixture and diced apples to the bowl of dry ingredients. Stir gently until just combined and the flour is moistened. Be careful not to over mix to keep the bread tender.
- Bake the Bread: Pour the batter into the prepared loaf pan, spreading it evenly. Bake in the preheated oven for 55-65 minutes. Test doneness by inserting a toothpick in the center; it should come out with moist crumbs but no raw batter.
