Description

This Apple Cinnamon Oatmeal Bread is a moist and flavorful quick bread combining the wholesome texture of rolled oats and diced apples with warm cinnamon spice. Perfect for breakfast or a comforting snack, it bakes up golden and tender with a subtle sweetness and comforting aroma.

Ingredients

Dry Ingredients

  • 1 cup quick cooking rolled oats
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp ground cinnamon

Wet Ingredients

  • 1 1/4 cups skim milk (or preferred milk)
  • 1/2 cup apple sauce
  • 2 tsp vanilla flavoring
  • 2 large eggs
  • 2 tbsp canola oil (or preferred cooking oil)

Additional

  • 2 medium apples, peeled and diced

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350 degrees Fahrenheit. Lightly spray a 9×5 inch loaf pan with cooking spray to prevent sticking, then set it aside.
  2. Mix Dry Ingredients: In a large bowl, combine the oats, all-purpose flour, granulated sugar, baking powder, baking soda, salt, and ground cinnamon. Stir well until all ingredients are evenly mixed.
  3. Prepare Wet Ingredients: In a separate medium bowl, whisk together the milk, apple sauce, vanilla flavoring, eggs, and canola oil until the mixture is smooth and well blended.
  4. Combine Batter: Add the wet ingredient mixture and diced apples to the bowl of dry ingredients. Stir gently until just combined and the flour is moistened. Be careful not to over mix to keep the bread tender.
  5. Bake the Bread: Pour the batter into the prepared loaf pan, spreading it evenly. Bake in the preheated oven for 55-65 minutes. Test doneness by inserting a toothpick in the center; it should come out with moist crumbs but no raw batter.
  6. Cool and Serve: Allow the bread to cool in the pan for about 10 minutes before removing it. Transfer the bread onto a wire rack and let it cool completely before slicing and serving.

Notes

  • Do not over mix the batter to ensure the bread stays tender and moist.
  • Peeled and diced apples add texture and moisture but can be substituted with other fruits if desired.
  • You can use whole milk or any plant-based milk as a substitute for skim milk.
  • For a nuttier flavor, consider adding chopped walnuts or pecans.
  • Store bread wrapped in plastic or in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
