Ingredients
Beef and Seasoning
- 2 pounds beef chuck, cut into 2-inch cubes
- 1 teaspoon salt
- ½ teaspoon freshly cracked black pepper
Spices and Aromatics
- 3 tablespoons neutral oil (such as vegetable or canola oil)
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 teaspoons garam masala
- 2 teaspoons cumin
- 1 teaspoon paprika
- 1 teaspoon turmeric
- ½ teaspoon ground mustard
- ½ teaspoon cayenne pepper (optional, omit for milder flavor)
- ½ teaspoon ground ginger
- ½ teaspoon cinnamon
Liquids and Final Ingredients
- 2 tablespoons tomato paste
- ¼ cup apple cider vinegar
- 1 cup low-sodium beef stock (plus more as needed)
- Cooked basmati rice, for serving
- Warmed naan bread, for serving
- Plain Greek yogurt, for serving (optional)
Instructions
- Prepare the Beef: Use a sharp kitchen knife to cut the beef chuck into 2-inch thick cubes. Transfer the cubed beef into a large mixing bowl.
- Season the Beef: Add 1 teaspoon salt and ½ teaspoon freshly cracked black pepper to the beef. Toss or gently stir to coat the beef evenly. Set aside.
- Heat the Skillet: Place a large skillet over medium-high heat. When hot, add the neutral oil and swirl to coat the bottom. Heat the oil until it is hot and shimmery.
- Sear the Beef: Add the seasoned beef cubes to the hot oil in the skillet. Sauté, turning frequently, until the beef is browned on all sides, about 6 minutes. Remove beef and set aside on a plate or bowl.
- Caramelize the Onions: Lower the heat to medium and do not drain the skillet. Add the chopped onion and cook for 15 minutes, stirring often, until the onion is deeply browned and caramelized. Avoid burning.
- Cook Garlic: Add the minced garlic to the skillet with the onions; stir well and cook together for 2 minutes until the garlic softens and becomes fragrant.
- Add Spices: Stir in garam masala, cumin, paprika, turmeric, ground mustard, cayenne pepper, ground ginger, and cinnamon. Continue stirring and cooking the mixture for 1 minute until the spices are hot and fragrant.
- Add Tomato Paste: Mix in the tomato paste until it is fully incorporated with the spices and onions.
- Deglaze Skillet: Pour in the apple cider vinegar and cook for 2 to 3 minutes, stirring constantly and scraping the bottom of the skillet to loosen any browned bits.
- Add Beef Stock and Return Beef: Pour in the beef stock and gently stir. Return the browned beef to the skillet. Allow the mixture to come to a boil over medium heat.
- Simmer the Curry: Once boiling, reduce heat to medium-low and cover with a lid. Let the beef simmer for 60 minutes, stirring occasionally and flipping the beef pieces for even cooking. Add additional beef stock (1-2 tablespoons) if the sauce becomes too thick, mixing it in fully before adding more.
- Adjust Seasoning: When the beef is tender and the sauce thickened to your liking, taste and adjust salt if necessary. If the vinegar flavor is too strong, stir in ½ to 1 teaspoon of packed brown sugar and simmer for another 2 to 3 minutes.
- Serve: Remove from heat and divide the Beef Vindaloo into four portions. Serve immediately over cooked basmati rice with warmed naan bread and optionally, 1 to 2 dollops of plain Greek yogurt for a cooling contrast.
Notes
- Use beef chuck for its tenderness and flavor after long simmering.
- Adjust cayenne pepper to control spice level—omit for milder taste.
- Adding brown sugar balances excess vinegar tang.
- Add beef stock as needed during simmer to keep sauce from drying out.
- Serve with basmati rice and naan to soak up the flavorful sauce.
