Description
Classic old fashioned pancakes made from scratch using simple ingredients like flour, baking powder, milk, butter, and vanilla, yielding fluffy, golden-brown pancakes perfect for a comforting breakfast served with butter and maple syrup.
Ingredients
Dry Ingredients
- 1 cup all-purpose flour
- 2 1/4 teaspoons baking powder
- 1 1/2 tablespoons granulated sugar
- 1/4 teaspoon salt
Wet Ingredients
- 1 cup milk
- 1/4 cup unsalted butter, melted
- 1/2 teaspoon vanilla bean paste
- 1 large egg
For Cooking and Serving
- Vegetable oil (for greasing the pan)
- Butter (for topping)
- Maple syrup (for topping)
Instructions
- Mix Dry Ingredients: In a large mixing bowl, sift together the all-purpose flour, baking powder, granulated sugar, and salt to ensure an even distribution and to eliminate any lumps.
- Whisk Wet Ingredients: In a separate medium mixing bowl, whisk together the milk, melted unsalted butter, vanilla bean paste, and the large egg until fully combined and smooth.
- Combine Wet and Dry: Pour the wet ingredient mixture into the dry ingredients and whisk gently until just combined. The batter will be lumpy; avoid over-mixing to keep pancakes light and fluffy. Let the batter rest for about 10 minutes to activate the baking powder.
- Prepare Pan: Lightly dampen a paper towel with vegetable oil and rub it over a large frying pan or griddle. Heat the pan over medium heat to prepare for cooking the pancakes.
- Cook Pancakes: Using a 1/4 cup measuring cup, pour batter onto the hot pan, making as many pancakes as can comfortably fit without crowding. Cook for 1-2 minutes until small bubbles begin to form on the surface and edges appear set and golden brown.
- Flip and Finish Cooking: Flip each pancake carefully using a spatula and cook for another 1-2 minutes on the other side until also golden brown and cooked through.
- Repeat: Continue cooking the remaining batter using the same method until all pancakes are ready.
- Serve: Serve the pancakes warm topped with pats of butter, a drizzle of maple syrup, and optional fresh fruit for extra flavor.
Notes
- Do not over-mix the batter to avoid tough pancakes; lumps are okay.
- Letting the batter rest before cooking helps make pancakes fluffier.
- Use medium heat on the pan to ensure pancakes cook evenly without burning.
- A 1/4 cup measure helps create evenly sized pancakes for consistent cooking.
- Customize toppings by adding fresh berries, nuts, or whipped cream.
