Ingredients
Spice Mix
- ¾ teaspoon onion powder
- ½ teaspoon coconut sugar (or brown sugar, optional)
- ½ teaspoon smoked paprika
- ½ teaspoon chili powder
- ½ teaspoon garlic powder
- ½ teaspoon dried basil
- ½ teaspoon dried thyme
- salt and freshly cracked black pepper (to taste)
Main Ingredients
- 2 mahi mahi fillets (each fillet about 6 ounces)
- 1 tablespoon olive oil
- lemon wedges (for serving)
Instructions
- Prepare the spices. In a shallow bowl, combine the onion powder, coconut sugar, smoked paprika, chili powder, garlic powder, dried basil, and dried thyme to create the spice mixture.
- Season the mahi mahi fillets. Pat the mahi mahi fillets dry with paper towels. Season both sides with salt and freshly cracked black pepper. Next, evenly coat each fillet with the prepared spice mixture, ensuring all sides are covered.
- Cook the fish. Heat the olive oil in a large skillet over medium-high heat. Once hot, add the seasoned mahi mahi fillets and cook for 2 to 3 minutes per side, or until the fish reaches an internal temperature between 130°F and 137°F. The fish should flake easily with a fork and appear opaque when done.
- Enjoy! Remove the fillets from the skillet and let them rest for a few minutes. Serve warm, drizzled with fresh lemon juice from the wedges for added brightness.
Notes
- If you don’t have coconut sugar, brown sugar works well as a substitute to add a hint of sweetness.
- Use a thermometer to ensure perfectly cooked fish; overcooking can cause dryness.
- If you prefer a spicier dish, add a pinch of cayenne pepper to the spice blend.
- This recipe pairs well with steamed vegetables or a fresh salad for a balanced meal.
