Description

These colorful and creamy Cereal Popsicles combine the nostalgic crunch of Fruity Pebbles cereal with smooth yogurt and flavored milk for a fun, kid-friendly frozen treat. Perfect for summer, they offer a delightful blend of sweet and tangy flavors with a crunchy surprise at the bottom of each popsicle.

Ingredients

Base Ingredients

  • 1 cup milk
  • 1 cup dry cereal (like Fruity Pebbles), divided
  • 1 cup Greek yogurt or Vanilla Yogurt

Instructions

  1. Flavor the milk with cereal: Pour the milk and half of the dry cereal into a bowl. Let the cereal soak in the milk for 10 minutes, stirring occasionally to release the flavors into the milk.
  2. Strain the cereal milk: Using a fine mesh sieve, strain the milk and cereal mixture. Save the flavored milk for the popsicle base and discard the soaked cereal pieces.
  3. Mix the popsicle base: In a clean bowl, combine the flavored cereal milk with the Greek or vanilla yogurt. Stir until smooth. Then fold in the remaining dry cereal, reserving one to two tablespoons for topping.
  4. Assemble the popsicles: Pour the yogurt and cereal mixture into 6 popsicle molds. Sprinkle the reserved dry cereal at the base of each mold, and insert the popsicle sticks.
  5. Freeze: Place the molds in the freezer and let them freeze for at least 4 hours, or up to 8 hours to ensure they are fully solidified.

Notes

  • Use full-fat Greek yogurt for a creamier texture, or vanilla yogurt for extra sweetness.
  • Adjust the type of cereal to your preference; Fruity Pebbles adds vibrant colors and fruity flavor, but other cereals can be used.
  • For easier unmolding, run the popsicle molds briefly under warm water before removing.
  • This recipe can be made dairy-free by substituting milk and yogurt with plant-based alternatives.
