Description

This Cheesy Brussels Sprout Casserole features tender roasted Brussels sprouts smothered in a creamy garlic and Italian-seasoned cheese sauce. Baked to bubbly perfection with a golden cheesy crust, this comforting casserole makes a perfect side dish for any meal or a cozy vegetarian main course.

Ingredients

Vegetables

  • 3 cups Brussels sprouts (bottoms removed and halved)

Seasonings and Oil

  • 1 tablespoon oil
  • 1 teaspoon salt (divided)
  • 1 teaspoon freshly cracked black pepper (divided)
  • 4 cloves garlic (minced)
  • 1 tablespoon Italian seasoning

Dairy

  • 1 cup heavy cream
  • 1 cup shredded parmesan cheese (or asiago, divided)
  • 1 1/2 cups shredded mozzarella cheese (divided)

Instructions

  1. Preheat and Prepare Dish: Preheat the oven to 400°F (200°C). Butter a 12-inch round cast iron skillet or a small casserole dish (such as 9×9 inches) and set it aside.
  2. Roast Brussel Sprouts: Toss the Brussels sprouts with the oil, then spread them evenly on a baking sheet lined with parchment paper. Sprinkle with 1/2 teaspoon salt and 1/2 teaspoon pepper. Roast in the oven for 12 minutes until tender but still crisp. Remove and let cool for 5 minutes.
  3. Prepare Cheese Mixture: In a large mixing bowl, combine the heavy cream, minced garlic, Italian seasoning, 3/4 cup parmesan cheese, 1 cup mozzarella cheese, and the remaining 1/2 teaspoon salt and 1/2 teaspoon pepper. Stir well to create a creamy, flavorful sauce.
  4. Combine and Assemble: Fold the cooled roasted Brussels sprouts into the cheese mixture ensuring they are well coated. Pour the mixture into the prepared skillet or casserole dish. Evenly sprinkle the remaining 1/4 cup parmesan and 1/2 cup mozzarella cheese over the top for a cheesy crust.
  5. Bake the Casserole: Place the casserole in the oven and bake for 25 to 30 minutes, or until the casserole is bubbly and the edges are browned and golden. Once done, remove from the oven and let rest for 5 minutes before serving to allow the dish to set.

Notes

  • For best results, trim and halve Brussels sprouts evenly to ensure even roasting.
  • You can swap parmesan cheese with asiago if desired for a slightly different flavor.
  • Use fresh garlic for optimal flavor; pre-minced garlic may alter the taste slightly.
  • Cast iron skillets provide excellent heat distribution for this casserole but any oven-safe casserole dish will work.
  • Letting the casserole rest after baking helps the sauce thicken and enhances serving texture.
