- ½ cup ketchup
- 1 tablespoon Worcestershire sauce
- 1 tablespoon yellow mustard
- 2 tablespoons tomato paste
- 1 teaspoon chili powder
- ½ teaspoon salt
- ¼ cup water (add more if needed)

- Heat oil and cook chicken mixture: Heat 2 tablespoons of olive oil in a large non-stick skillet over medium-high heat. Add the ground chicken, diced onion, minced garlic, and diced green bell pepper. Cook, breaking up the chicken with a spatula, until the chicken is no longer pink, about 5-7 minutes.
- Add sauces and seasonings: Reduce heat to medium, then add ketchup, Worcestershire sauce, yellow mustard, tomato paste, and chili powder directly to the skillet. Stir well to evenly coat the chicken and vegetables with the sauce mixture.
- Incorporate water: Pour in ¼ cup of water and stir to combine all ingredients thoroughly.
- Simmer the mixture: Reduce heat to low and simmer the chicken mixture for 10-15 minutes, stirring occasionally, until flavors meld together and the sauce thickens slightly.
- Toast brioche buns: While the mixture simmers, toast the brioche buns in the oven or on a griddle with a little butter until they are lightly golden and crisp.
- Assemble sandwiches: Spoon the sloppy joe chicken mixture onto the bottom halves of the toasted brioche buns, then top with the other halves.
