  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1 celery rib, chopped
  • 1 carrot, peeled and chopped
  • 1 Persian cucumber, chopped
  • 4 radishes, chopped
  • 2 green onions, trimmed and chopped (both white and green parts)
  • 1/4 cup pitted Kalamata olives, chopped
  • 1/4 cup pitted Castelvetrano olives, chopped
  • 1 cup chopped fresh parsley leaves
  • 1/4 cup chopped fresh mint leaves

Dressing

  • Dijon Vinaigrette (see note)

Bread

  • 8 slices whole grain bread, toasted


Instructions

  1. Mix: Add the drained and rinsed chickpeas to a large mixing bowl and lightly mash them using the back of a fork to create a chunky texture. Add the chopped celery, carrot, Persian cucumber, radishes, green onions, Kalamata olives, Castelvetrano olives, parsley, and mint to the bowl. Season everything with a generous pinch of salt and freshly ground black pepper, then toss gently to combine all the ingredients evenly.
  2. Dress: Pour in the Dijon vinaigrette dressing gradually, adding as much as you like to coat the chickpeas and vegetables well. Toss the mixture thoroughly to ensure all the components are coated with the dressing, enhancing the flavor and bringing the salad together.
  3. Serve: Spoon the dressed chickpea salad mixture evenly over 4 slices of the toasted whole grain bread. Top each open-faced sandwich with the remaining 4 slices of toasted bread to form sandwiches. Serve immediately and enjoy the fresh, crunchy, and flavorful chickpea salad sandwiches.
